Many Charter Schools on Hawai‘i Island are moving forward to create a healthy and nutritious snack and lunch program for their students. Because each charter school is its own school food authority, the flexibility for purchasing and being innovative and creative with school food is evident in many of the programs on Hawai‘i Island. Each is unique and has practices that should be shared!

Eighteen months ago, Kona Pacific switched over to all-scratch cooking, using whole foods and no added refined flours or sugars, while reducing food costs 30%. We did it with the help of Carleton Gillenwater, expert food service culinary planner and chef. Carleton will present a workshop for culinary staff, presenting simple steps and a roadmap so that every school can make the switch.
