Food Industry Fundamentals Workshops (Kailua-Kona)

October 17, 2014–Get the edge on the local food marketplace! Join us for two in-depth workshops in Kona:

Workshop #1: Food Product Development and Technology Essentials
This course will move from “farm to fork” to explore the many product development technologies that can be utilized for optimal quality and enhanced food safety. These include good agricultural practices (GAPs), cold chain management, product formulation options, thermal and non-thermal processing technologies, extended shelf-life packaging considerations, and best practices in distribution. Innovative technologies such as modified atmosphere packaging (MAP), sous vide, cook chill, and high pressure processing will be discussed as well. You’ll learn current best practices in product development, and how to optimize product quality.

Workshop #2: Quality Assurance and Food Safety Principles
Farmers, processors, retailers and food service operators must have an understanding of the principles of food safety in order to minimize risk to the public. In this course, you’ll learn how to create a holistic food safety and quality system—including management commitment, facility infrastructure requirements, sanitation, pest control, personnel practices, training, microbiological testing, traceability and crisis management, food security, and HACCP. An overview of the Global Food Safety Initiative (GFSI) and third-party food safety and quality certification programs will be provided."

January 27, 2015—You are invited to attend a presentation sponsored by The Kohala Center and Habitat Health Impact Consulting that will address the way in which Health Impact Assessments (HIAs) can be used as a tool for incorporating health and well-being concerns into public policymaking. HIAs help identify and address the likely health benefits and risks of a decision made in fields outside the health sector. They use a flexible approach that brings together public health expertise, scientific data, and input from community and other stakeholders to examine the potential health risks and benefits of key policy proposals. Based on the potential effects identified, HIAs provide practical recommendations to capitalize on opportunities to improve community health and to minimize any potential health risks.

March 8, 2015—The Spring 2015 Honoka‘a Seed Exchange and Potluck will be held on March 8 from 12:30 to 4:30 p.m. at the Honoka‘a People's Theatre. All community members are invited to share and take home seeds from neighbors and practiced seed-savers of the area. There will be free seeds and catalogs from suppliers such as Baker's Creek, Johnny's Seeds, Territorial Seed, and Southern Exposure Seed Exchange. Local seed expert Lyn Howe will give a presentation on seed-saving and answer questions from the community about seeds and gardening. This is a potluck event so attendees are asked to bring a bowl and utensils.
